Abstract:

Today, according to the purpose of use, it is necessary to determine some quality characteristics in addition to the production of one grain.  This study was conducted between 2010-2014 with the aim of determining the performance and quality conditions of 14 different bread species in Yozgat’s ecological conditions. Testing random blocks were performed three times by trial pattern. The study studied the varieties of plant length, one-production, a thousand-weight, hectolitre weight, aside ratio, fat ratio, protein content, niche content, age gluten content, Zeleny sedimentation value, acid detergent unsoluble fiber (ADF) and neutral detergent unsoluble fiber (NDF) values. According to the average of three years, the plant lengths of the varieties are 60.2-80.3 cm, one productions are 290.5-372. 2 kg and 1, thousand weights of 29.2-38.4 g, hectolitre weights varied between 77.7-79.7 kg. Dry ratio 1.62-1.82, fat ratio 1.40-1.91, protein ratio 12.0-13.8, nitrate content 61.6-65.0, age gluten content 23.9-28.0, sedimentation values 21.5-33.1 ml, and ADF and NDF values varied from 3.5-4.4 to 14.9-16.0 per cent respectively. The highest one production was obtained from the varieties of Tosunbey (372.2 kg to-1), Flamura 85 (367.1 kg to-1), Syrena Odes (357.0 kg to-1). However, according to the Biplot analysis chart, the varieties of Tosunbey and Syrena Odes are also highlighted in terms of plant length with hectolitre weight, a thousand weights, niches and oil ratio.
