Abstract:

From the 13th to the 15th centuries, the Coptic was used as a written language in the northern Black Sea (now Russia, Ukraine, the Caucasus), Egypt and Syria. Although it belongs to the northern group of Western Turkish, in the 12th century, because the Kipchak went to Egypt as a slave, it found a sphere of spread in the Egyptian and Syrian geography, and the language spoken in this geography was classified as the Memluk Kipchak. Many works are written to make it easier for Arabs to learn Turkish. Most of the works are composed of dictionaries and grammar books. It is known to the Turkish peoples that the animal farming entered from front Asia and through Harezm and the main areas that hosted and developed the animals came from Central Asia. The reason for the variation of the vocabulary of dairy products in Turkish height is that the storage conditions are different, the kind of dairy, the proportion of dairy to other ingredients, the form of cooking can be considered. In this study, the vocabulary related to milk and dairy products was studied through the works of the historic Kıpçakça period and the historic Turkish language and the state of use in the contemporary Kıpçakça. The name of the dictionary has not been mentioned in the work because the Codex Cumanicus, which is written for traders in the northern Black Sea in Latin liter, has not been found a vocabulary related to dairy products. It was only the words of the period of time, and the word was not included in the literary works or not. The opinions on the word in the ethymological dictionaries are also presented.
