Toplumların kültürel değerlerini gelenek, görenek ve alışkanlıklar oluşturmakta ve bu değerler uzun bir zaman sürecinde birikimler sonucu ortaya çıkmaktadır. Türk toplumunun alışkanlıkları arasında yer alan yeme ve içme alışkanlıkları kültürel açıdan önemli bir yere sahiptir. Çalışmamıza konu olan kahve yıllar boyunca sosyal ortamlarda önemli rol alan içeceklerin başında gelir. Türk halkı tarafından sevilerek tüketilen ve hatırı sayılır özellikte olan kahvenin içme alışkanlığı yaklaşık olarak 5. yüzyıldan günümüze kadar devam etmektedir. Kahve “coffea” cinsi bir ağacın kiraza benzeyen parlak kırmızı renkteki meyve çekirdeklerinin kavrulup öğütülmesi ile elde edilen tozudur. Kahvenin ilk defa nerede bulunduğu hakkında eski kaynaklarda birbirine benzeyen bilgiler yer almakla beraber genellikle kahvenin anavatanın Yemen olduğu ancak ilk kahvenin Yemen’e Habeşistan’dan getirildiği bilinmektedir. Kahvenin Arabistan’dan batı ülkelerine yayılması Osmanlı coğrafyası üzerinden sağlandığından Avrupalılar kahveyi Türk içeceği olarak adlandırmışlardır. Yüzyıllardır mutlu eden ve keyif veren bir içecek olma özelliği ile yaygın olarak tüketilen kahve, sosyal hayatta etkisini gösteren önemli bir içecektir. Türk kahve kültürü yaşayan geleneklerimiz arasında yer almaktadır. Günlük hayatın bir parçası olarak özellikle ikram edilme vasfıyla önceleri sosyal bir statü göstergesi olan kahve, eğlence, sohbet ve misafirlik gibi sosyal kurumların yeri doldurulamaz içeceği olarak somut olmayan kültürel miras haline gelmiştir. Bu çalışmada; Türk toplumu açısından kahvenin önemi belirtilerek kahvenin geçmişi ve Türk kahvesinin hazırlanması hakkında bilgi verilmiştir. Ayrıca kahvenin sosyal hayattaki görevi vurgulanmaya çalışılarak, kültürel miras özelliğinin devam ettirilmesi için öneriler sunulmuştur.
The cultural values of societies are formed by traditions, habits, and habits, and these values arise as a result of accumulations over a long period of time. Eating and drinking habits in the Turkish community have a cultural importance. Coffee, which is the subject of our study, has been the leader of drinks that have played an important role in social environments over the years. The habit of drinking coffee, which is loved by the Turkish people and has a great memory, continues from the 5th century to the present day. Coffee "coffea" is the powder that is obtained by a tree's bright red-like fruit nuts that look like cherry. It is often known that the coffee was originally in Yemen, but the first coffee was brought to Yemen from Abkhazia. Since the spread of coffee from Arabic to Western countries is provided through the Ottoman geography, Europeans have called coffee Turkish drink. Coffee, which has been widely consumed for centuries with its characteristic of being a pleasant and pleasant drink, is an important drink that shows its impact on social life. The Turkish coffee culture is one of our traditional traditions. As part of everyday life, it has become a non-specific cultural heritage as the place of social institutions, such as coffee, entertainment, chat and hospitality, which is first a social status indicator, especially with the gift of being given. In this study, the importance of coffee in the Turkish community was pointed out, giving information about the history of coffee and the preparation of Turkish coffee. Furthermore, the role of coffee in the social life has been emphasized and recommendations have been presented for the continuation of its cultural heritage.
Traditions, customs and habits constitute the cultural values of societies. These values are the result of accumulation of a long period of time. The eating and drinking habits that are among the habits of the Turkish society are culturally significant. Coffee which is the subject of my study is at the forefront of beverages that play an important role in the social environment for years. It is known that drinking habits of coffee, which is loved and loved by the Turkish people and which is considered to be a precious feature, continues from the 5th century until the present day.Coffee is powder obtained from a tree of the genus coffea by roasting and grinding of bright red fruit cores reminding of cherry. While coffee is located in the ancient sources of similar information about the first time where it is often found along Yemen's homeland of coffee but it is known that the first coffee brought from Yemen to Ethiopia. Since the spread of the coffee from Arabia to the western countries was provided through Ottoman geography, the Europeans called coffee as Turkish beverages. For centuries, happy and joyful to be characterized by a beverage widely consumed coffee is an important beverage showing the effect of social life. Turkish coffee culture is among our ongoing traditions. As part of everyday life, it has become an indispensable cultural heritage as an irreplaceable drink of social institutions such as entertainment, conversation and hospitality, which coffee has been a sign of social status with a special emphasis on being serviced previously. In this study; in terms of Turkish society by declaring the importance of coffee the history of coffee and were informed about the preparation of Turkish coffee. In addition, the coffee by emphasizing the duty of the social life, proposals have been presented for the continuation of the cultural heritage feature.
