Özet Beslenme insanın karşılaması gerektiğitemel biyolojik gereksinimidir. Aynı zamanda kişiden kişiye, bölgeden bölgeye, toplumdan topluma farklılıklar gösteren bir dizi kültürel öğeyi meydana getiren önemli bir kültür sistemidir. Bu kültür sisteminin adı " yemek kültürü"dür. Yemek kültürü, bir toplumda yiyeceğin üretilmesinden tüketilmesine kadar izlediği serüven ve bu serüvene bağlı olarak ortaya çıkan maddi-manevi kültür öğelerinin oluşturduğu önemli bir kültürel sistemdir. Antakya değişik kültürel öğelerden meydana gelen mozaik bir yapıya sahiptir. Bu mozaiğin önemli motiflerinden birisi geleneksel ve törensel yemekleri bulunan oldukça zengin bir içeriğe sahip olan Antakya yemek kültürüdür. Antakya yemek kültürünün şekillenmesinde rol oynayan önemli etmenler ekolojik, ekonomik, kültürel ve dinsel etmenlerdir. Food culture is an adventure of the food from production to consumption and based upon this adventure created by the physical and moral cultural elements in society. Antakya has a mozaic structure of various cultural elements. One of these pattern of this mozaic is food culture of Antakya which has traditional and ceremonial foods and a rich includeings. The important facts played roles in structuring of food culture of Antakya are ecologic, religious, and cultural ones. Nutrition is a biological requirement that a person needs to meet. It is also an important cultural system that produces a series of cultural elements that show differences from person to person, from region to region, from society to society. This culture is called “Food Culture”. The food culture is an important cultural system that follows from the production to the consumption of food in a society, and which constitutes the material and spiritual cultural elements that arise from this food. Antakya has a mosaic structure consisting of various cultural elements. One of the main motives of this mozaic is the Antakya food culture, which has a very rich content with traditional and ceremonial meals. The important factors that play a role in the formation of Antakya food culture are ecological, economic, cultural and religious factors.
