Bu çalışmada, temel gıda maddelerinden olan ekmek ve onun imalinden sorumlu ekmekçi esnafı üzerinde durulacaktır. Bu bağlamda Osmanlı taşrasında yer alan Balıkesir’de XVII. ve XVIII. yüzyıllarda, ekmekçi esnafının teşkilatlanması, kendi içinde yaşanan sorunlar ve denetleme mekanizması ele alınacaktır. Ayrıca Balıkesir’deki ekmek fırınları, imal edilen ekmek çeşitleri, ekmeğin gramaj ve fiyatları ile toplumsal yaşantı içerisinde ekmekçi esnafının durumunu ortaya koymak amaçlanmaktadır
