Bu çalışmanın amacı, turizm işletme belgeli yiyecek-içecek işletmelerinden biri olan restoranların yöneticilerinin, restoranı pazarlamada ve müşterilere hizmet sunmada fiziksel kanıtlara yönelik bakış açılarını belirlemektir. Alanyazın incelendiğinde fiziksel kanıtların müşteriler üzerindeki etkilerinin araştırıldığı, ancak restoran yöneticilerinin bu konu hakkındaki görüşlerini belirlemek amacıyla yeterli düzeyde çalışmanın yapılmadığı görülmüştür. Eskişehir ilinde faaliyet gösteren restoranların yöneticileri, araştırmanın evrenini oluşturmaktadır. Veriler yarı yapılandırılmış görüşme formundan yararlanılarak görüşme tekniği ile toplanmıştır. 2015 yılının Temmuz ayında 18 restoranda toplam 19 yönetici ile yüz yüze görüşme yapılmıştır. Elde edilen veriler, içerik analizi ile incelenmiş ve beş tema elde edilmiştir. Sonuç olarak restoran yöneticilerinin büyük bir kısmının, fiziksel kanıtları planlarken ambiyans ve tasarım boyutlarına dikkat ettikleri, fiziksel kanıtlardan müşteri memnuniyeti oluşturmak amacıyla yararlandıkları, restoranlarında kullandıkları fiziksel kanıtlarıçok zorunlu nedenlerle değiştirdikleri ve fiziksel kanıtlar içindefazla temizlik ve dekor unsurlarına önem verdikleri tespit edilmiştir. Bu çalışmanın, fiziksel kanıtların restoran yöneticilerinin bakış açısıyla değerlendirilmesi konusunda, alanyazına katkı sağlaması beklenmekte, fiziksel kanıtların restoranların pazarlanmasındaki rolü konusunda restoran yöneticileri için yol gösterici olacağı düşünülmektedir.
The aim of this study is to identify the views of the managers of restaurants, one of the food and beverage enterprises certified by tourism enterprises, on physical evidence in restaurant marketing and customer service. When the area was studied, the effects of physical evidence on customers were studied, but it was found that there was not enough work done to determine the opinions of restaurant managers on the subject. The managers of the restaurants that operate in Eskişehir province form the universe of research. The data is collected using a semi-configured interview form. In July 2015, a total of 18 restaurants met with 19 managers. The data obtained was studied through content analysis and five themes were obtained. As a result, the majority of restaurant managers have found that they pay attention to the environment and design dimensions when planning physical evidence, that they use physical evidence to create customer satisfaction, that they have changed the physical evidence they use in their restaurants for very compulsory reasons, and that they pay too much attention to the cleaning and decoration elements in physical evidence. This study is expected to contribute to the scope of the assessment of physical evidence from the point of view of restaurant managers, and is expected to be a guide for restaurant managers about the role of physical evidence in the marketing of restaurants.
