Bu çalışmanın amacı; otel işletmelerinin yiyecek içecek departmanındaki atmosferin, çalışanların iş performansını ne doğrultuda etkilediğini ölçmektir. Literatür taramasından elde edilen bilgiler doğrultusunda bir anket formu geliştirilmiştir. Araştırma, 2017 yılının Mayıs-Eylül aylarında Muğla ilinin Marmaris ilçesinde bulunan beş yıldızlı konaklama işletmelerinin yiyecek içecek departmanında çalışan personele anket formları dağıtılmıştır. 313 otel personelinden elde edilen veriler SPSS programında analize tabi tutulmuştur. Veriler faktör analizi, korelasyon analizi ve regresyon analizi ile çözümlenmiştir. Sonuçta oluşturulan sekiz hipotezden beşi kabul edilirken, üçü kabul edilmemiştir.
The aim of this study is to measure how the atmosphere in the food and beverage department of hotel enterprises affects the work performance of employees. A survey form was developed according to the information obtained from the literature scan. The research, in May-September of 2017, distributed survey forms to staff working in the food and beverage department of five-star accommodation companies located in the Marmaris district of Muğla. The data obtained from 313 hotel staff were analyzed in the SPSS program. The data is analyzed by factor analysis, correlation analysis and regression analysis. After all, five of the eight formed hypotheses were accepted, but three were not accepted.
The aim of this study; to measure how the atmosphere in the food and beverage department of hotel establishments, in other words, physical and social factors affect the job performance of employees. A questionnaire was developed based on the information obtained from the literature review. In the research, the data collected from 313 hotel staff working in the food and beverage department of five-star accommodation establishments located in Marmaris district of Muğla province in May-September 2017 were analysed with SPSS program. SPSS 17.0 statistical program was used to analyse the data that includes various statistical tools such as factor analysis, correlation analysis and regression analysis. As a result of the research, 5 of the hypotheses were supported while 3 hypotheses were not supported.
