Turizm sektörü, konaklama, yiyecek içecek, ulaştırma ve seyahat işletmeleri temelinde turistlerin beklentileri doğrultusunda mal ve hizmet üreten çok boyutlu bir sektördür. Turizm sektöründe sunulan mal ve hizmetler çeşitlilik göstermektedir. Turizm işletmelerinin, kaliteli ve güvenli mal ve hizmet sunumu, müşteri memnuniyetinin sağlanması açısından önem taşımaktadır. Turizm sektöründe, konaklama hizmetlerinin kalite standardı kadar, yiyecek içecek hizmetlerinin sunumunda gıda güvenliği ve kalitesi de, özellikle turist sağlığı açısından büyük önem taşımaktadır. Bu bağlamda, sektörde faaliyet gösteren turizm işletmelerinin, bir insan hakkı olan sağlıklı yaşam hakkı ekseninde, gıda ürünlerinin alımı, depolanması, hazırlanması ve sunumu süreçlerinde sağlık, hijyen ve sanitasyon standartlarını mutlak olarak yerine getirmesi zorunludur. Yapılan çalışmada, içerik analizi yöntemi uygulanmıştır. Detaylı bir literatür taraması yapılarak, turizmde gıda güvenliğinin bir insan hakkı olan sağlık hakkı açısından taşıdığı önem irdelenmiştir. Elde edilen bulgulara göre, sağlık bilincine sahip turistin, turistik destinasyon tercihinde sağlıklı ve kaliteli satın alma ön plandadır. Turizm işletmeleri, sundukları turistik ürünün tekrar talep edilmesini sağlamak için, gıda güvenliğine ilişkin sistemlerin işleyişini uygun süreç ve standartlar çerçevesinde sağlamakla yükümlüdür.
