Şaraplık Üzüm Çeşitlerinde Tane ve Salkım Gelişiminin Zamana Bağlı Olarak Değişimi

Bu çalışma 2017 ve 2018 yılları arasında Kavaklıdere Şarapları A.Ş’ye ait Kırşehir İlinin Toklumen bağlarında yapılmıştır. Çalışma yapılan bağlar 2006 ve 2011 yılları arasında kurulmuştur. Kalecik Karası, Öküzgözü ve Boğazkere çeşitlerinden tane ve salkım örnekleri alınarak fiziksel ve kimyasal analizler yapılmıştır. Hasat esnasında yıllara göre SÇKM değeri sırasıyla Boğazkere çeşidinde % 20.4 – 21.1, Kalecik Karası çeşidinde % 24.3 – 23.7 ve Öküzgözü çeşidinde % 22.2 – 21.4 toplam asitlik miktarı Boğazkere çeşidinde 7.11-4.84 g/l, Kalecik Karası çeşidinde 6.08-7.60 g/l, Öküzgözü çeşidinde 5.55-5.70 g/l olarak belirlenmiştir. Çeşitler arasında kabukta flavonoid içerikleri bakımından her iki yılda da en yüksek değerler Öküzgözü çeşidinde tespit edilmiştir (134-111 mg QUE/g). Üzüm tanelerinde bulunan fenolik bileşik, flavonoid ve antosiyanin değerleri çeşit ve yıl bazında farklılık göstermiştir.

Abstract:

This study was conducted between 2017 and 2018 in the Toklumen districts of Kırşehir Province of Kavaklıdere Wine A.Ş. The works were established between 2006 and 2011. Physical and chemical analyses have been performed by taking samples of one and a few of the varieties of Kalecik Karas, Oksigözü and Gogazkere. During the harvest according to the years, the SCHM value is respectively 20.4 - 21.1 per cent in the Boğazkere variety, 24.3 - 23.7 per cent in the Boğazkere variety and 22.2 - 21.4 per cent in the Boğazkere variety; the total acidity amount in the Boğazkere variety is 7.11 - 4.84 g/l, 6.08-7.60 g/l in the Boğazkere variety, 5.55 - 5.70 g/l in the Boğazkere variety. The highest levels of flavonoid content in the leather among varieties were identified every two years in the oxygen variety (134-111 mg QUE/g). The values of phenolic compounds, flavonoids and antosyanin found in grapes varied by variety and year.
