Bu çalışmada, Van ilinde üretilen 35 adet polen örneğinin rutubet miktarı, su aktivitesi içeriği ve pH değerleri ile aflatoksin içerikleri araştırılmıştır. Polen örneklerindeki aflatoksin B1, B2, G1 ve G2, (AFB1, AFB2, AFG1 ve AFG2) miktarları yüksek performanslı sıvı kromatografisi (HPLC) ile belirlenmiştir. Yapılan araştırmada polen örneklerinin rutubet miktarı %7.35 ile %11.41 arasında değişiklik göstermiş olup ortalama %9.46±0.18 olarak belirlenmiştir. Polen örneklerinin ortalama su aktivitesi (aw) içeriği 0.28±0.01 olarak tespit edilmiş olup 0.24 ile 0.45 arasında değişiklik göstermiştir. pH değerleri ise 3.91’den 5.50’ye kadar farklılık göstermiş ve ortalama 4.38±0.06 olarak tespit edilmiştir. Örneklerin hiçbirinde AFB1 tespit edilemezken, AFB2 düzeyleri 0-0.24 μg/kg arasında dağılım göstermiştir (ortalama 0.01±0.01 μg/kg). Polen örneklerinin toplam aflatoksin düzeylerinin minimum, maksimum ve ortalama değerleri sırasıyla 0, 2.84 ve 0.34±0.13 μg/kg olarak belirlenmiştir. Örneklerin aflatoksin düzeyi ile rutubet miktarları arasında düşük fakat istatistiksel olarak önemli bir korelasyon (r: 0.41) bulunmuştur. Çalışma sonucunda, incelenen toplam 35 polen örneklerinin 23’ünde (%66) aflatoksin saptanmış ve belirlenen aflatoksin miktarının Türk Gıda Kodeks’ine göre kabul edilebilir limitler içerisinde olduğu tespit edilmiştir. İncelenen polen örneklerindeki rutubet düzeyinin artışına bağlı olarak toplam aflatoksin düzeylerindeki artış yüksek aflatoksin içeriğinin depolama şartlarından kaynaklandığını düşündürmektedir.
In this study, the ampulate of 35 pollen samples produced in the province of Van, the water activity content and pH values and aflatoxin content were studied. The amounts of aflatoxin B1, B2, G1 and G2 (AFB1, AFB2, AFG1 and AFG2) in polish samples are determined by high-performance fluid chromatography (HPLC). In the study, the amount of rubbets in pollen samples varied between 7.35% and 11.41%, and the average was 9.46%±0.18. The average water activity (aw) content of the Polish samples was identified as 0.28±0.01 and varied between 0.24 and 0.45. The pH values varied from 3.91 to 5.50 and were identified as an average of 4.38±0.06. While AFB1 cannot be detected in any examples, the AFB2 levels are 0-0. Distribution between 24 μg/kg (medium 0.01±0.01 μg/kg). The minimum, maximum and average values of total aflatoxin levels in polish samples were determined at 0.2.84 and 0.34±0.13 μg/kg respectively. A low but statistically significant correlation (r: 0.41) was found between the levels of aflatoxin and the amounts of rubbets in the samples. According to the study, in 23 of the total 35 pollen samples studied (66%) aflatoxin was detected and the determined amounts of aflatoxin were within acceptable limits according to the Turkish Food Code. As a result of the increase in the rubber levels in the pollen samples surveyed, the increase in the total aflatoxin levels suggests that the high aflatoxin content is due to storage conditions.

Aflatoxin B1, B2, G1 and G2 (AFB1, AFB2, AFG1 and AFG2) contents of the pollen samples were detected by high-performance liquid chromatography (HPLC). The moisture contents varied from 7.35% up to 11.41% with an average of 9.46±0.18%. The average water activity (aw) was determined as 0.28±0.01 varying between 0.24 and 0.45. The pH value varied from 3.91 to 5.50 and averaged 4.38±0.06. While AFB1 was not detected in any of the samples AFB2 content varied between 0.00 and 0.24 μg/kg with an average of 0.01±0.01 μg/kg. The minimum, maximum and mean value of total aflatoxin level was determined as 0, 2.84 and 0.34±0.13 μg/kg, respectively. A low but statistically significant correlation (r=0.41) between the total aflatoxin and moisture content was found (P<0.05). As a result, aflatoxin was detected in 23 (66%) of the 35 pollen samples tested, and the amount of aflatoxin was found within the ranges permitted by the Turkish Food Codex. The positive correlation between the moisture content the aflatoxin content of the pollen samples examined suggested that the high aflatoxin levels observed might due to inappropriate storage condition.
