Tin Free Still (TFS) Ambalajlar İçerisinde Satışa Sunulan İçeceklerin Üst Kapaklarının Mikrobiyolojik Profili

Abstract:

Bu araştırmada marketlerde, büfelerde, kafelerde, vb. farklı zamanlarda satışa sunulan çeşitli içeceklerin üst kapaklarının mikrobiyal profilinin belirlenmesi amaçlanmıştır. Bu amaçla Ekim- Haziran ayları arasında toplam 800 adet içecek numunesi alınmıştır. Örneklerin toplam aerobik mezofilik bakteri (TAMB), toplam maya küf (TMK), toplam koliform grubu bakteri (TKGB) ve Staphylococcus aureus sayıları ile Escherichia coli, Salmnonella spp. ve Listeria monocytogenes türü bakteri varlıkları araştırılmıştır. En yüksek TAMB sayısı 5.22 log kob/cm2 ile soğuk çay grubu içeceklerde, en yüksek TMK, TKBG sayıları ve Staphylococcus aureus türü bakteri sayısı sırasıyla 5.11 log kob/cm2, 4.21 log kob/cm2 ve 3.37 log kob/cm2 meyve aromalı içecekler grubunda olduğu tespit edilmiştir. Ayrıca 35 örnekte Escherichia coli, 21 örnekte Salmonella spp. ve 18 örnekte de Listeria monocytogenes türü bakteri varlığı belirlenmiştir.

Abstract:

In this research in the markets, buffets, cafes, etc. The aim is to determine the microbial profile of the top cover of various beverages offered for sale at different times. A total of 800 amounts of drinks were taken between October and June. The total number of examples of aerobic mesophilic bacteria (TAMB), the total mage cough (TMK), the total koliform group bacteria (TKGB) and Staphylococcus aureus are Escherichia coli, Salmnonella spp. and Listeria monocytogenes type bacterial assets have been studied. The highest number of TAMBs with 5.22 log kob/cm2 in the cold tea group drinks, the highest number of TMK, TKBG and Staphylococcus aureus type bacteria were found to be 5.11 log kob/cm2, 4.21 log kob/cm2 and 3.37 log kob/cm2 fruit aromatic drinks, respectively. There are also 35 examples of Escherichia coli, 21 examples of Salmonella spp. And in 18 examples, the presence of the Listeria monocytogenes type bacteria was determined.

For this purpose, a total of 800 beverage samples were taken between October and June. Total aerobic mesophilic bacteria (TAMB), total yeast mold (TMK), total coliform group bacteria (TKGB) and Staphylococcus aureus and Escherichia coli, Salmonella spp. and Listeria monocytogenes type bacteria were investigated. The highest TAMB number was 5.22 log cfu/cm2 in cold tea group beverages, the highest TMK, TKBG numbers and Staphylococcus aureus species bacteria count were in the group of fruit flavored beverages, respectively 5.11 log cfu/cm2, 4.21 log cfu/cm2, and 3.37 log cfu / cm2. has been determined. In addition, presence bacteria species, Escherichia coli in 35 samples, Salmonella spp. in 21 samples and Listeria monocytogenes 18 samples was detected.
