Mersin (Myrtus communis L.) is a medical and aromatic plant that grows naturally in the Mediterranean region. The fruit of white marble is cultivated commercially for food purposes in our country. The consumption of black mercury fruit is less and there is also very little information about its agricultural characteristics. In recent years, the interest in black-colored fruits has increased due to its high antioxidant capacity. Furthermore, the absence of a significant disease and harmfulness of the black mercury fruit makes the organic cultivation of this fruit also attractive. Flowing oils extracted from the leaves of the peanut plant are used for medical and aromatic purposes called peanut oil This study aims to study the changes occurring in the leaves and fruits in black and white peanut but from the attitude of the fruit to the harvest during the fruit development period. In this regard, during the period between July and November, physical and chemical changes in the fruits and changes in the flighting fat components in the leaves were observed. During this period, the leaf length varied between 9.84-13.30 mm, and the length of the leaf was between 25.84-31.51 mm. The average fruit weight (mg of fruit-1) is 605.68 in the type of Hambeles and 355.94 in the type of Jacob. The highest flighting components in the leaves of the mercury plant are α-pinene (40.67) and 1,8- cineole (38%) It was found 78.
