Abstract:

In this study, sustainable gastronomy theses in the National Thesis Center (YÖKTEZ) database were examined within the framework of the aim of revealing the postgraduate research on sustainable gastronomy in post-Republican Turkey from past to present. The reason for analyzing theses within the scope of the research is that they are more comprehensive and prepared in a certain period of time compared to other types of works. In the research, which was prepared with the survey model, one of the qualitative research methods, 12 postgraduate theses were evaluated in terms of various parameters with bibliometric analysis technique. Within the framework of the Analysis, findings on the years, types, universities, departments, bibliography numbers, advisor titles, method contents and keywords of the theses were obtained. According to the results of the research, studies on sustainable gastronomy have increased in recent years. This shows that this research will shed light on future studies. The highest number of thesis studies on the subject was conducted in 2022. Another prominent point is that qualitative research methods are mostly used in postgraduate theses. The fact that the study is a pioneering bibliometric study on sustainable gastronomy theses in the national literature is considered as the factors that increase the quality, importance and originality of the study. The fact that this is the first bibliometric study on sustainable gastronomy tourism in the national literature increases the originality and quality of the study.
