BİNGÖL’DE ÜRETİLEN BALLARDA BAZI KALİTE KRİTERLERİNİN BELİRLENMESİ

Abstract:

Bu çalışma Bingöl yöresinden üretilen ballarda HMF, diastaz, nem ve C4 şeker özelliklerini belirlemek amacıyla 2014 -2016 yılı arasında, arı yetiştiricileri birliğine kayıtlı 32 üyeden elde edilen bal örneklerinden yapılmıştır. Araştırma sonucunda bulunan değerler Türk Gıda Kodeksi Bal Tebliği ve Avrupa Birliği standartlarına göre uygun olduğu değerlendirilmiştir. Araştırmada kullanılan bal örneklerinde belirlenen değerler sırası ile, nem miktarı ortalama, % 15,39±0,28 , HMF miktarı %36,37±2,35, diastaz sayısı ortalama %18,39 ±1,08 ve C 4 şeker kriteri ortalama 1,37±0,21 olarak gerçekleşmiştir.
