Bu araştırma için derlenen bilgiler İstanbul ili küçük çekmece ilçesindeki 400 hane halkı ile birebir görüşülerek elde edilmiştir. Yapılan anket sayısı Anakitle Oranlarına Dayalı Kümelendirilmemiş Tek Aşamalı Basit Tesadüfî Olasılık Örneklemesi ile belirlenmiştir. İkincil verilerden Türkiye’nin sığır ve dana etinde 4,5 kg, koyun ve keçi etinde 4,5 kg, kanatlı etinde 16 kg ve balıketinde 10 kg kişi başına tüketime sahip olduğu belirlenmiştir. Çalışmada haneler için beyaz ve kırmızı et tüketiminde etkili olan demografik faktörler üzerinde durulmuştur. Regresyon analizi sonucunda hanelerin geliri arttıkça hem kırmızı hem de beyaz et tüketimi artmakta, bayanlar erkeklere göre hem kırmızı eti hem de beyaz eti tüketiminde daha etkili olmakta, hanelerin ev sahibi olması kırmızı et tüketimini artırırken, hanelerin kiracı olması beyaz et tüketimini artırmaktadır. Yaş ilerledikçe hanelerin kırmızı et tüketimi azalırken beyaz et tüketimi artmaktadır. Hanelerin eğitim seviyesi yükseldikçe, beyaz ve kırmızı et tüketimini azaltmaktadır. Birey sayısı arttıkça kırmızı et tüketimi azalırken beyaz et tüketimi artmaktadır. Aile reisinin mesleği işçi olunca hane halkının kırmızı et tüketimi azalmakta, iş adamı olunca da beyaz et tüketimi artmaktadır. Sadece İstanbul küçük çekmece ilçesi değil Türkiye’nin büyük bir kısmında bitkisel ağırlıklı beslenme yapılmaktadır. Türkiye gibi hayvancılıkta önde gelen bir ülke için hayvansal ürünlerle beslenmenin çok düşük düzeylerde kalması şaşırtıcıdır. Bu nedenle ailelere kitle yayım araçları ile hayvansal besin kaynaklarının yararlarından bahsedilmelidir. Böylece tüketicilerin daha fazla hayvansal kaynaklı besinleri almaları sağlanmalıdır.
The information collected for this study was obtained by conversations with 400 households in the small district of Istanbul. The number of surveyed is determined by an uncolored one-stage simple random chance sample based on the Anakitle Rate. According to secondary data, Turkey has a consumption of 4.5 kg of cattle and cattle, 4.5 kg of cattle and cattle, 16 kg of wings and 10 kg of fish per person. The study focused on demographic factors that influence the consumption of white and red meat for households. As a result of the regression analysis, the income of households increases, both red and white meat consumption increases, women are more effective in both red and white meat consumption than men, while households are home to increase red meat consumption, while households are rental to increase white meat consumption. With the age, red meat consumption decreases and white meat consumption increases. As the education level of the households rises, the consumption of white and red meat is reduced. As the number of individuals increases, the consumption of red meat decreases, while the consumption of white meat increases. When the family traveler’s profession becomes a worker, the consumation of red meat of the households decreases, and when the businessman becomes a businessman, the consumption of white meat increases. It is not only a small district in Istanbul, but a large part of Turkey is plant-weight food. It is surprising for a country leading in animal farming such as Turkey that foods with animal products remain at very low levels. Therefore, families should be discussed about the benefits of mass broadcasting tools and animal food sources. It is therefore necessary to ensure that consumers receive more animal foods.
