If we go beyond the history of Turks in Anatolia, it can be understood that rose’s history is as old as human history. Back in ancient Egypt and ancient Greece roses were used to obtain fragrance and in the Hanging Gardens of Babylon roses were among the flowers that Amytes grew. In light of resources information about the history of Central Asia originated roses by the Turks can be examined only until the 11th century. Using rose as a fragrance doesn’t usually find a place to itself in medical books. But rose scented powder was mentioned in the 15th century in an important medical book, "Kemaliye". Rose petals are crushed in a pestle into powder and after bath it is applied on the moist neck with massage. Therefore, the smell stays for a long time and it is applied for psychological treatment. Drinking sherbet named cülab and cülangebin during the banquets is mentioned. Medicines and pastes made from rose and rosewater were very common in Ottoman Empire. In Edirne, the second capital of the state, roses were grown in a place called Gülhane, which was in the palace. In Gülhane there was a building along with the garden. This place was used to produce rosewater. It is possible to see the same plan and description of it in Kauffer’s map drawn in 1776. Like others, rose oil was commonly used in the old medicine. The use of rose oil is mentioned in Avicenna's book "Kanun" for treating brain disorders and memory problems. In addition to that, this oil is commonly used for diseases such as eczema. Another point of focus is that, rose oil had an important role in hafiz training back in Ottoman Empire.
