Gastronomi bir bölgenin yiyecek ve içecek kültürünü, etkinliklerini, işletmelerini ve üretim alanlarını kapsayan bir kavramdır. Gastronomi turizmi ise, gastronomik unsurlardan en az birinin turistik ürün olarak sunulması ile meydana gelen bir turizm çeşididir. Bu araştırmanın amacı, Gümüşhane ilinin gastronomi turizmi açısından değerlendirilmesidir. Araştırmada veri toplama aracı olarak doküman analizi ve yarı yapılandırılmış görüşme tekniği kullanılmıştır. Gümüşhane ilinin gastronomik unsurlarına ilişkin yazılı ve görsel kaynaklar taranarak ve ilgili kişilerle görüşülerek gastronomi potansiyeli ortaya konulmuştur. Yapılan görüşmeler ile Gümüşhane ilinin gastronomi turizminin mevcut durumunun tespit edilmesi amaçlanmış ve gastronomi turizminin geliştirilebilmesi için neler yapılması gerektiği konusunda ilgili kişi ve kurumlara öneriler sunulmuştur. Çalışmada elde edilen bulgulara göre, Gümüşhane iline özgü birçok yerel yiyecek ve içeceğin bulunduğu ancak bu yiyecek ve içeceklerin turistik ürün olarak sunumunun yetersiz olduğu tespit edilmiştir. Nitekim ilgili kişi, kurum ve kuruluşların yürüteceği ortak çalışmalar ile birlikte, Gümüşhane ilinin gastronomik unsurlarının turistik ürün olarak sunumunun artırılabileceği ve gastronomi turizmi açısından daha iyi bir konuma gelebileceği öngörülmektedir. Bununla birlikte, Gümüşhane iline yönelik turizm talebinin artırılmasında gastronomi turizminin diğer turizm türleri ile birlikte destekleyici ve tamamlayıcı bir turizm türü olabileceği ve şehrin markalaşmasında önemli roller üstlenebileceği belirlenmiştir.
