Coğrafi işaretler, bir ürünün ait olduğu bölgeyi, sahip olduğu özellikleri gösteren, geleneksel özelliklerini koruyarak gelecek nesillere aktarılmasını sağlayan işaretler olarak tanımlanabilir. Coğrafi işaret onayı ile ürünün kalitesi, geçmişten getirdiği özellikler, bölgeden sağlanan ürünlerin hammaddesi ile bölgeye özgü özelliklerle bağlantılı olarak belli bir popülarite kazanmış ürünlerin korunması sağlanır. Tokat ili zengin tarihi mirası, kültürü ve coğrafi işaretli ürünleri ile son yıllarda ön plana çıkmaktadır. Tokat’ın geniş bir ürün yelpazesi ve coğrafi işaret almayı hak eden birçok kültürel ve geleneksel değeri bulunmaktadır. Tokat’ın 7 adet gıda alanında olmak üzere toplam 8 adet yöresel ürünü coğrafi işaretle tescillenmiştir. 5 mahreç ve 3 adet menşe işaretine sahip olan bu gastronomik lezzetler ve ürünler mahreç ve menşe işaretini alma sırasına göre eskiden yeniye doğru Zile Pekmezi(2009), Niksar Cevizi(2013), Turhal Yoğurtmacı(2014), Tokat Kebabı(2015), Erbaa Narince Bağ yaprağı(2017), Zile Kömesi(2017), Tokat Narince Salamura Asma Yaprağı(2019) ve Tokat Yazması(2020)’dır. Bu çalışmanın amacı, ülkemizde birçok ürünle coğrafi işaret almış ve alacak olan illerimizden biri olan Tokat’ın yöresel ürünlerini incelemektir. Bu çalışmada amacına göre kuramsal araştırma ve yöntemine göre ise literatür tarama yöntemi uygulanmıştır. Bu çalışmada birçok sonuç ortaya çıkarılmıştır temelde ise son dönemlerde hızla gelişen gastronomi kavramı, coğrafi işaret olgusu ile bir araya geldiği noktada insanların Tokat mutfak kültürümüzün önemini kavramasına yardımcı olacaktır.
Geographical signs can be defined as signs that show the area a product belongs to, the characteristics it possesses, and allow it to be transmitted to future generations by preserving its traditional characteristics. Geographical sign approval and the quality of the product, the characteristics it brings from the past, the raw materials of the products supplied from the region and the characteristics specific to the region guarantees the protection of the products that gained a certain popularity in connection with. Tokat is in the forefront in recent years with its wealth of historical heritage, culture and geographical marked products. Tokat has a wide range of products and many cultural and traditional values that deserve to get geographical labels. A total of 8 local products, including 7 food fields, are registered with a geographical mark. These gastronomic flavours and products, which have 5 corners and 3 corners, according to the order of receiving corners and corners, are formerly new to Zile Pekmezi(2009), Niksar Cevizi(2013), Turhal Yogurtmacı(2014), Tokat Kebabı(2015), Erbaa Narince Bağ sheet(2017), Zile Kömesi(2017), Tokat Narince Salamura Asma Sheet(2019) and Tokat Writing(2020) The purpose of this study is to explore the local products of Tokat, one of our provinces that has received and will receive geographical labels with many products in our country. In this study, according to theoretical research and methodology, the literary scan method was applied. Many findings have been revealed in this study, in fact, the concept of gastronomy that has evolved rapidly in recent periods will help people understand the importance of our Tokat cuisine culture at the point where the phenomenon of geographical sign is combined.
