İsraf, sosyal bir durum olmakla birlikte büyük ekonomik ve çevresel sonuçlar doğurabilen bir sorun olarak görülmektedir. Gıda da yapılan israf ise dünyanın tümünü etkileyebilecek derece de önemli olarak algılanmaktadır. Birleşmiş Milletler Gıda ve Tarım Örgütü (FAO) verilerine göre dünya genelinde her yıl ortalama 750 milyar dolar değerindeki gıda, yani üretilen gıdanın üçte biri israf olmaktadır. Bu israfın %20’si tarlada, %40’ı ise sofrada meydana gelmektedir. Bu çalışmanın amacı Tokat’ta yaşayan tüketicilerin gıda israf davranışına etki eden faktörlerin ortaya konulmasıdır. Çalışmada sonlu popülasyon standart sapma yerine popülasyon oranı kullanımı ile basit tesadüfi örneklem yöntemiyle %95 güven düzeyi ve %5 hata payı için gerekli olan asgari örnek hacmi belirlenmiştir. Buna göre 383 adet anket yeterli olmasına rağmen 435 adet anket yapılması ön görülerek sonucun daha güvenilir hale getirilmesi amaçlanmıştır. Anket çalışmasında 5’li likert ölçeği kullanılarak faktör ve güvenilirlik analizleri yapılmıştır. Çalışmada faktörlerin 3 başlık altında toplandığı görülmektedir. I. faktör grubu toplam varyansın %49.048’ini açıklayan ve ’’Gıda israfına karşı farkındalık ve dikkat’’ olarak adlandırılan grubu, II. faktör grubu %20.520’sini açıklayan ‘‘Gıda israfının önlenmesi’’ faktörünü, III. faktör grubu ‘’Gıda israfına yönelik bilinç’’ diye adlandırılan ve varyansın %16.341’ini açıklayan grup olmak üzere hepsi birden toplam varyansın %85.909’unu açıklamaktadır. İsrafla mücadele insalığın geleceği açısından zorunluluk arz ettiğinden dolayı buna yönelik eğitimlerin aileden başlamak üzere verilmesi bunun için de öncelikle ebeveynlerin bilinçlendirilmesi gerekmektedir. Ayrıca israfta önemli bir boyut olan gıda tedariği soğuk zincirine dikkat edilmesi gıdaların bozulmasının önlenmesini sağlayacaktır.
Israf is a social situation, but it is seen as a problem that can result in major economic and environmental consequences. The waste of food is also considered to be significant to the extent that it can affect the entire world. According to the United Nations Food and Agriculture Organization (FAO), food worth an average of $750 billion per year, a third of the food produced in the world, is waste. 20% of this waste is in the field and 40% in the table. The aim of this study is to identify the factors affecting the behavior of food waste of consumers living in Tokat. In the study, the use of the population ratio instead of the standard deviation of the final population with the simple random sampling method determined the minimum sampling volume required for the 95% confidence level and 5% error share. According to this, 383 surveys were sufficient, but 435 surveys were conducted in advance and the aim was to make the result more reliable. In the survey, a factor and reliability analysis was performed using the 5 liquid scale. The study shows that the factors are gathered under 3 headlines. Factor group I, which describes 49.048% of the total variance and is called "consciousness and attention to food waste", II. The factor "Food waste prevention" which describes the factor group of 20.520%, III. The group of factors, which is called "consciousness towards food waste" and describes 16.341 percent of the variance, all of them describe 85.909 percent of the total variance at once. As the fight against the evil is mandatory in terms of the future of mankind, it is necessary to give education to the family to begin with it, and it is necessary to first awareness the parents. Furthermore, the attention to the cold chain of food supply, which is a significant amount of waste, will prevent the distortion of food.

The purpose of this study is to reveal the factors affecting food waste behavior of consumers living in the city of Tokat. In the study, the minimum sample volume required for 95% confidence level and 5% error margin was determined by simple random sampling method with the use of population rate instead of finite population standard deviation. Accordingly, although 383 questionnaires are sufficient, it is aimed to make 435 questionnaires and make the result more reliable. In the survey, factor and reliability analyzes were conducted by using the 5-point Likert scale. In the study, it is observed that the factors are gathered under 3 titles. The first factor group explains 49.048% of the total variance and is named as "Awareness and attention to food waste", second factor group explains 20.520% of total variance and is named as '' Prevention of food waste '' factor, the third factor group explains 16.341% of tatal variance and is named as ‘’Creating Awareness against the food waste’’ and the factor group altogether explains 85.909% of the total variance. Since the struggle against wastage of food is imperative in terms of the future of humanity, , in order to raise awareness of children, parents should be trained. Also, paying attention to the food supply cold chain, which is an important dimension in waste, will prevent the spoilage of the foods.
