Bu çalışmada, Rize’de bulunan organik alabalık yetiştiriciliği yapan işletmelerin yapısal ve ekonomik analizi yapılmıştır. Araştırmada kullanılan veriler, yüz yüze görüşmelerle, anket ve gözlem yoluyla elde edilmiştir. İncelenen işletmelerde, aktif içerisinde en büyük sermaye grubunu arazi ve havuz varlığı oluşturmaktadır. İşletme sermayesi içerisinde en büyük payı balık varlığı oluşturmaktadır. İşletme birim havuz alanına en fazla brüt hasıla B işletmesinde (771,70 TL/ m 2) elde edilmiştir. Net kar en yüksek A (1 927 558 TL), en düşük F (46 972 TL); sermaye devir oranı en yüksek E ( % 70.09 ve 1.43 yıl), en düşük F ( % 20.99 ve 4.77 yıl); rantabilitesi en yüksek E (% 59. 81) ve en düşük F (% 12.31) işletmelerinde hesaplanmıştır. Bölge genelinde işletmelerde bulunan ortalama damızlık balık sayısı 1 284 adet, damızlıkların ortalama yumurta verimi ise 2 166.7 adet/damızlık olarak bulunmuştur. İşletmelerin toplam proje kapasitesi ve üretimi 471 ton/yıl olup yaptıkları organik yetiştiricilik toplamı ise 161 ton/yıl olarak görülmektedir. İşletmelerdeki havuzların ortamla hasat yoğunluğu 19.01 kg/m 3 olarak saptanmıştır. Yem dönüşüm oranı ortalama 1.10 olarak belirlenmiştir.
In this study, a structural and economic analysis of the enterprises that are doing organic beans in Rize was carried out. The data used in the research was obtained through face-to-face conversations, surveys and observations. In the revised enterprises, the largest group of capital within the activity is the land and pool assets. The largest share of the business capital is the fish. The business unit in the swimming pool area was obtained with the most gross profits in the business B (771,70 TL/m2). Net profit is the highest A (1 927 558 TL), the lowest F (46 972 TL); the capital turnover rate is the highest E (% 70.09 and 1.43 years), the lowest F (% 20.99 and 4.77 years); the highest profitability E (% 59. 81) and the lowest F (% 12.31) are calculated in enterprises. The average number of dust fish found in enterprises throughout the region was 1,284 and the average egg production of dust fish was 2,166,7 per dust. The total project capacity and production of the enterprises is 471 tons/year and the total organic cultivation of the enterprises is 161 tons/year. The harvest intensity of swimming pools in the enterprises was determined at 19.01 kg/m3. The food conversion rate is estimated at an average of 1.10.
